The person who was to become St. Patrick, the patron saint of Ireland, was born in Wales about AD 385 and his given name was Maewyn.

At the age of 16 he was sold into slavery by a group of Irish marauders that raided his village. During his captivity, he became closer to God. He escaped from slavery after six years and went to Gaul, France, where he studied for a period of twelve years. During his training he became aware that his calling was to convert the pagans to Christianity.

His wishes were to travel to Ireland, to convert the native pagans to Christianity. Patrick was quite successful at winning converts, a fact that upset the Celtic Druids and he was arrested several times, but escaped each time. He traveled throughout Ireland, establishing monasteries across the country. He also set up schools and churches which would aid him in his conversion of the Irish country to Christianity.

His mission in Ireland lasted for thirty years. After that time, Patrick retired to County Down. He died on March 17 in AD 461. That day has been commemorated as St. Patrick's Day ever since.

21st March - the earliest Mother's Day celebrations can be traced back to the spring celebrations of ancient Greece in honor of Rhea, the Mother of the Gods. During the 1600's, England celebrated a day called "Mothering Sunday". During this time many of the England's poor worked as servants for the wealthy. As most jobs were located far from their homes, the servants would live at the houses of their employers. On Mothering Sunday the servants would have the day off and were encouraged to return home and spend the day with their mothers. A special cake, called the mothering cake, was often brought along to provide a festive touch.

While many countries of the world celebrate their own Mother's Day at different times throughout the year, there are some countries such as Denmark, Finland, Italy, Turkey, Australia and Belgium which celebrate Mother's Day on the second Sunday of May.

Treat your Mum to Mother's Day Pie

1 cup white sugar

2 tablespoons all-purpose flour

1/4 teaspoon salt

6 tablespoons butter, melted

1 teaspoon vanilla extract

3 eggs

1 (12 fluid ounce) can evaporated milk

1 cup shredded coconut

  • Preheat oven to 325 degrees F (165 degrees C). Generously grease and flour a 9 inch pie plate.
  • In a medium bowl, mix together sugar, flour, and salt. Stir in melted butter or margarine and vanilla extract.
  • Add eggs one at a time, mixing well after each addition.
  • Mix in evaporated milk followed by coconut.
  • Pour mixture into pie plate.
  • Bake in preheated oven for 35 to 40 minutes.
  • Chill before serving.
