1/3 cup parmesan cheese
1/2 cup flour
1/2 tsp thyme
1 tsp paprika
1/2 tsp salt
pinch of cayenne pepper to taste
1/4 cup melted butter
5-6 boneless, skinless chicken breasts
oven to 400 F/205 C/Gas 6. Stir together all
ingredients, except melted butter. Melt butter
in another shallow bowl. Dip chicken pieces
in the butter, then press into cheese mixture,
pressing gently until chicken is evenly coated.
Place chicken in a shallow baking dish. DO NOT
crowd chicken or it will become soggy. Bake
in the centre of the oven for 10 -15 minutes.
Brush with remaining butter during cooking.
with Garlic Mashed Potatoes
1/2 - 3/4 kilo potatoes
1/2 tsp salt
1/3 cup olive oil
2 cups chicken or vegetable broth
2 Tbsp butter
1 garlic clove, minced
Peel potatoes and cut into 1 1/2 inch pieces.
Place in pot and add broth. If needed add more
cold water to cover the potatoes. Bring to boil,
add salt. Cook for 20 minutes or until tender.
Drain, reserving 2/3 cups of broth. Return potatoes
to pot and mash. Slowly beat in olive oil. Add
the reserved broth a little at a time. You may
not need all the broth. Stir in the butter and
garlic. Season with salt and pepper.
